A hearty and delicious beef soup made easily in the air fryer! Tender beef, savory vegetables, and a rich broth come together in this simple and comforting recipe.

- 1.5 lbs beef stew meat, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 medium carrots, peeled and chopped
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 6 cups beef broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1 bay leaf
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper, or to taste
- 2 medium potatoes, peeled and diced (optional)
- 1 cup frozen peas (optional, added at the end)
- Fresh parsley, chopped, for garnish
Instructions
- 1. Toss the beef cubes with 1 tablespoon of olive oil, salt, and pepper in a bowl.
- 2. Preheat your air fryer to 400°F (200°C). Place the beef in the air fryer basket or a suitable air fryer safe pot in a single layer (you may need to do this in batches). Cook for 8-10 minutes per side, tossing halfway through.
- 3. Remove the browned beef and set aside. Add the remaining tablespoon of olive oil to the same air fryer pot. Add the chopped onion, carrots, and celery. Cook for 5-7 minutes, stirring occasionally, until the vegetables start to soften.
- 4. Stir in the minced garlic, tomato paste, dried thyme, and dried rosemary. Cook for another minute or two until fragrant. Then, pour in the beef broth and diced tomatoes. Stir well to combine.
- 5. Return the browned beef to the air fryer pot. Add the Worcestershire sauce and bay leaf. Stir.
- 6. Close the air fryer and continue cooking at 325°F (160°C) for 1 hour and 30 minutes to 2 hours, or until the beef is very tender. Check the soup periodically and add more beef broth if needed to maintain the desired consistency.
- 7. If using potatoes, add them about 30 minutes before the end of the cooking time.
- 8. Remove the bay leaf. If desired, stir in the frozen peas during the last 5 minutes of cooking. Taste and adjust seasoning with salt and pepper as needed. Garnish with fresh parsley before serving.
