  • 1 pound cod fillets, cut into 1-inch pieces
  • 1 pound pasta (penne, rotini, or your favorite)
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1/2 cup dry white wine
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
  • Lemon wedges for serving

Instructions

  1. Preheat your air fryer to 400°F (200°C). Lightly spray the air fryer basket with cooking spray.
  2. Season the cod pieces with salt and pepper. Place them in the air fryer basket in a single layer, ensuring they are not overcrowded. Cook for 8-10 minutes, or until the cod is cooked through and flakes easily with a fork.
  3. While the cod is cooking, cook the pasta according to package directions. Drain and set aside.
  4. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook for another minute until fragrant.
  5. Pour in the crushed tomatoes and white wine. Stir in the oregano and red pepper flakes (if using). Bring to a simmer and cook for 10 minutes, allowing the sauce to thicken slightly.
  6. Gently fold in the cooked cod and pasta into the sauce. Toss to combine and heat through.
  7. Stir in the fresh parsley. Serve immediately with lemon wedges.
