- 1 pound cod fillets, cut into 1-inch pieces
- 1 pound pasta (penne, rotini, or your favorite)
- 1 tablespoon olive oil
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1/2 cup dry white wine
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley
- Lemon wedges for serving
Instructions
- Preheat your air fryer to 400°F (200°C). Lightly spray the air fryer basket with cooking spray.
- Season the cod pieces with salt and pepper. Place them in the air fryer basket in a single layer, ensuring they are not overcrowded. Cook for 8-10 minutes, or until the cod is cooked through and flakes easily with a fork.
- While the cod is cooking, cook the pasta according to package directions. Drain and set aside.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook for another minute until fragrant.
- Pour in the crushed tomatoes and white wine. Stir in the oregano and red pepper flakes (if using). Bring to a simmer and cook for 10 minutes, allowing the sauce to thicken slightly.
- Gently fold in the cooked cod and pasta into the sauce. Toss to combine and heat through.
- Stir in the fresh parsley. Serve immediately with lemon wedges.
