- 1/2 cup all-purpose flour
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1 large egg, beaten
- 1/2 cup panko breadcrumbs
- Cooking spray
- 8 small flour tortillas
- 1/2 cup sour cream or Greek yogurt
- 1/4 cup chopped fresh cilantro
- 1/4 cup lime juice
- Shredded cabbage, for topping
- Salsa, for topping
- Avocado slices, for topping
Instructions
- Preheat your air fryer to 400°F (200°C).
- In a shallow dish, combine flour, paprika, garlic powder, salt, and pepper.
- In a second shallow dish, place the beaten egg.
- In a third shallow dish, place the panko breadcrumbs.
- Dredge each cod fillet in the flour mixture, then dip in the egg, and finally coat with panko breadcrumbs, pressing gently to adhere.
- Spray the air fryer basket with cooking spray.
- Place the breaded cod fillets in the air fryer basket, being careful not to overcrowd. You may need to cook in batches.
- Spray the tops of the cod fillets with cooking spray.
- Air fry for 8 to 10 minutes, flipping halfway through, until the cod is cooked through and the breading is golden brown and crispy. The internal temperature of the cod should reach 145°F (63°C).
- While the cod is cooking, prepare the sour cream sauce by combining sour cream or Greek yogurt, cilantro, and lime juice in a small bowl. Mix well.
- Warm the tortillas according to package directions.
- Assemble the air fryer cod wraps: Place a crispy cod fillet in each tortilla, top with sour cream sauce, shredded cabbage, salsa, and avocado slices.
