  • 2 Salmon fillets (68 ounces each), skin on or off
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon onion powder
  • 2 cups cooked quinoa (or rice, farro, or grain of choice)
  • 1 cup chopped broccoli florets
  • 1/2 cup sliced bell peppers (any color)
  • 1/4 cup shredded carrots
  • 2 tablespoons sesame seeds (optional)
  • 1 avocado, sliced (optional)
  • FOR DRESSING:
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon honey (or maple syrup)
  • 1/4 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. In a small bowl, combine olive oil, paprika, garlic powder, salt, pepper, and onion powder.
  3. Rub the spice mixture evenly over both sides of the salmon fillets.
  4. Place the salmon fillets in the air fryer basket, ensuring they are not overlapping.
  5. Air fry for 8-12 minutes, depending on the thickness of the salmon, or until it is cooked through and flakes easily with a fork.
  6. While the salmon is cooking, steam or saute the broccoli and bell peppers until tender-crisp.
  7. Prepare the dressing by whisking together olive oil, lemon juice, honey (or maple syrup), and Dijon mustard in a small bowl. Season with salt and pepper to taste.
  8. Assemble the bowls. Divide the cooked quinoa (or other grain) between two bowls. Top with steamed or sautéed broccoli and bell peppers, shredded carrots, and the air fried salmon.
  9. Drizzle with the dressing and garnish with sesame seeds and sliced avocado, if desired.
  10. Serve immediately.
