  • 1 pound salmon fillet, skin on or off
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 5 ounces mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard

Instructions

  1. 1. Pat the salmon fillet dry with paper towels. In a small bowl, combine 1 tablespoon olive oil, smoked paprika, garlic powder, salt, and pepper. Rub the mixture all over the salmon.
  2. 2. Preheat your air fryer to 400°F (200°C). Place the salmon in the air fryer basket, skin side down (if using skin on). Cook for 8-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
  3. 3. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.
  4. 4. In a small bowl, whisk together 2 tablespoons olive oil, lemon juice, Dijon mustard, salt, and pepper.
  5. 5. Once the salmon is cooked, flake it into bite sized pieces. Add the salmon to the salad bowl. Pour the dressing over the salad and toss gently to combine.
