- 1 pound salmon fillet, skin on or off
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 5 ounces mixed greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
Instructions
- 1. Pat the salmon fillet dry with paper towels. In a small bowl, combine 1 tablespoon olive oil, smoked paprika, garlic powder, salt, and pepper. Rub the mixture all over the salmon.
- 2. Preheat your air fryer to 400°F (200°C). Place the salmon in the air fryer basket, skin side down (if using skin on). Cook for 8-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
- 3. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.
- 4. In a small bowl, whisk together 2 tablespoons olive oil, lemon juice, Dijon mustard, salt, and pepper.
- 5. Once the salmon is cooked, flake it into bite sized pieces. Add the salmon to the salad bowl. Pour the dressing over the salad and toss gently to combine.
- 6. Serve immediately.
