A flavorful and easy to make air fryer shrimp soup, perfect for a quick and healthy weeknight meal.

- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- 1 medium onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 6 cups chicken broth (or vegetable broth)
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup frozen corn
- 1/2 cup chopped fresh parsley
- Juice of 1/2 lemon
Instructions
- Preheat air fryer to 400°F (200°C). Toss shrimp with oil, spices, salt, and pepper.
- Arrange shrimp in air fryer basket in single layer and cook for 57 minutes, flipping halfway through.
- In large pot, cook onion, carrots, and celery until softened. Add garlic and cook 1 minute.
- Pour broth and tomatoes in next. Bring to boil, then simmer for 15 minutes.
- Stir in corn and cooked shrimp. Simmer 5 minutes.
- Stir in parsley and lemon juice. Season. Serve hot.
