Description

A flavorful and easy to make air fryer shrimp soup, perfect for a quick and healthy weeknight meal.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth (or vegetable broth)
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup frozen corn
  • 1/2 cup chopped fresh parsley
  • Juice of 1/2 lemon

Instructions

  1. Preheat air fryer to 400°F (200°C). Toss shrimp with oil, spices, salt, and pepper.
  2. Arrange shrimp in air fryer basket in single layer and cook for 57 minutes, flipping halfway through.
  3. In large pot, cook onion, carrots, and celery until softened. Add garlic and cook 1 minute.
  4. Pour broth and tomatoes in next. Bring to boil, then simmer for 15 minutes.
  5. Stir in corn and cooked shrimp. Simmer 5 minutes.
  6. Stir in parsley and lemon juice. Season. Serve hot.
