Ingredients

Scale
  • For the Dough:
  • 2 1/4 cups all purpose flour
  • 1 teaspoon salt
  • 1 cup warm milk
  • 2 tablespoons olive oil
  • 1 teaspoon sugar
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • For the Filling:
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup beef broth
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)

Instructions

  1. 1. Prepare the Dough: In a large bowl, whisk together the flour and salt. In a separate bowl, combine warm milk, olive oil, sugar, and yeast. Let stand for 5 minutes until foamy.
  2. 2. Combine Wet and Dry Ingredients: Pour the yeast mixture into the flour mixture and stir until a dough forms. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic.
  3. 3. Let the Dough Rise: Place the dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place for 1 hour, or until doubled in size.
  4. 4. Prepare the Filling: While the dough is rising, cook the ground beef in a large skillet over medium heat until browned. Drain off any excess fat.
  5. 5. Add Aromatics: Add the chopped onion and minced garlic to the skillet and cook until softened, about 5 minutes.
  6. 6. Incorporate Tomatoes and Spices: Stir in the oregano, smoked paprika, and cayenne pepper (if using). Add the diced tomatoes and beef broth. Bring to a simmer and cook for 15-20 minutes, or until the sauce has thickened slightly.
  7. 7. Stir in Parsley: Stir in the fresh parsley and season with salt and pepper to taste. Remove from heat and let cool slightly, at least 10 minutes for handling.
  8. 8. Assemble the Wraps: Preheat oven to 375°F (190°C). Punch down the dough and divide it into 8 equal pieces. Roll each piece into a thin circle, about 6-8 inches in diameter.
  9. 9. Fill and Fold: Place about 1/2 cup of the beef filling in the center of each circle. Fold the dough in half, forming a half moon shape. Crimp the edges with a fork to seal.
  10. 10. Bake: Place the baked beef wraps on a baking sheet lined with parchment paper. Brush the tops with the beaten egg. Bake for 20-25 minutes, or until golden brown.
  11. 11. Cool Slightly: Let the baked beef wraps cool for a few minutes before serving. Serve warm and enjoy!
