- 1.5 lbs beef chuck, cut into 1-inch cubes
- 1 tbsp olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 cup beef broth
- 1/2 cup tomato sauce
- 1 tbsp Worcestershire sauce
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup frozen mixed vegetables
- 6 large flour tortillas
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh parsley, for garnish (optional)
Instructions
- 1. Preheat your oven to 375°F (190°C).
- 2. In a large skillet, heat the olive oil over medium high heat. Brown the beef cubes in batches, then set aside.
- 3. Add the chopped onion to the skillet and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
- 4. Return the beef to the skillet. Pour in the beef broth, tomato sauce, and Worcestershire sauce. Add the dried oregano, salt, and pepper. Bring to a simmer.
- 5. Cover and transfer the entire skillet to the preheated oven. Bake for 1.5 to 2 hours, or until the beef is very tender.
- 6. Remove the skillet from the oven and stir in the frozen mixed vegetables. Let it sit for about 5 minutes while the vegetables heat through.
- 7. Warm the flour tortillas slightly.
- 8. Spoon the beef mixture onto each tortilla. Sprinkle with shredded cheddar cheese.
- 9. Roll up the tortillas tightly.
- 10. Place the wrapped tortillas seam side down on a baking sheet.
- 11. Bake for 10 to 15 minutes, or until the tortillas are golden brown and the cheese is melted and bubbly.
- 12. Garnish with chopped fresh parsley, if desired. Serve immediately.
