Ingredients

  • 1.5 lbs beef chuck, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup tomato sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup frozen mixed vegetables
  • 6 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh parsley, for garnish (optional)

Instructions

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. In a large skillet, heat the olive oil over medium high heat. Brown the beef cubes in batches, then set aside.
  3. 3. Add the chopped onion to the skillet and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  4. 4. Return the beef to the skillet. Pour in the beef broth, tomato sauce, and Worcestershire sauce. Add the dried oregano, salt, and pepper. Bring to a simmer.
  5. 5. Cover and transfer the entire skillet to the preheated oven. Bake for 1.5 to 2 hours, or until the beef is very tender.
  6. 6. Remove the skillet from the oven and stir in the frozen mixed vegetables. Let it sit for about 5 minutes while the vegetables heat through.
  7. 7. Warm the flour tortillas slightly.
  8. 8. Spoon the beef mixture onto each tortilla. Sprinkle with shredded cheddar cheese.
  9. 9. Roll up the tortillas tightly.
  10. 10. Place the wrapped tortillas seam side down on a baking sheet.
  11. 11. Bake for 10 to 15 minutes, or until the tortillas are golden brown and the cheese is melted and bubbly.
