Ingredients

  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 2 cups cooked brown rice
  • 1 cup broccoli florets
  • 1 cup chopped carrots
  • 1/2 cup corn kernels
  • 1/4 cup shredded cheddar cheese (optional)
  • 2 tbsp chopped green onions (optional)
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1/2 tsp ginger, grated

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss chicken cubes with olive oil, paprika, garlic powder, salt, and pepper until evenly coated.
  3. Spread chicken in a single layer on a baking sheet and bake for 15-20 minutes, or until cooked through and internal temperature reaches 165°F (74°C).
  4. While chicken is baking, steam broccoli and carrots until tender crisp, about 5-7 minutes.
  5. Prepare the sauce by whisking together soy sauce, honey, rice vinegar, sesame oil, and grated ginger in a small bowl.
  6. Divide cooked brown rice into bowls.
  7. Top rice with baked chicken, steamed broccoli, carrots, and corn.
  8. Drizzle sauce over each bowl.
  9. Garnish with shredded cheddar cheese (if using) and chopped green onions (if using).
  10. Serve immediately.
