- 1.5 lbs boneless, skinless chicken breasts, cut into 1 inch cubes
- 1 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- 1/2 tsp salt
- 2 cups cooked brown rice
- 1 cup broccoli florets
- 1 cup chopped carrots
- 1/2 cup corn kernels
- 1/4 cup shredded cheddar cheese (optional)
- 2 tbsp chopped green onions (optional)
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1/2 tsp ginger, grated
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss chicken cubes with olive oil, paprika, garlic powder, salt, and pepper until evenly coated.
- Spread chicken in a single layer on a baking sheet and bake for 15-20 minutes, or until cooked through and internal temperature reaches 165°F (74°C).
- While chicken is baking, steam broccoli and carrots until tender crisp, about 5-7 minutes.
- Prepare the sauce by whisking together soy sauce, honey, rice vinegar, sesame oil, and grated ginger in a small bowl.
- Divide cooked brown rice into bowls.
- Top rice with baked chicken, steamed broccoli, carrots, and corn.
- Drizzle sauce over each bowl.
- Garnish with shredded cheddar cheese (if using) and chopped green onions (if using).
- Serve immediately.
