- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces

- 1/2 teaspoon garlic powder

- Salt and pepper to taste
- 1 cup quinoa (or rice), uncooked
- 2 cups chicken broth
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 zucchini, diced
- 1/2 red onion, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh parsley, chopped
- Lemon wedges, for serving (optional)
Instructions
- 1. Preheat oven to 400°F (200°C).
- 2. Toss chicken with olive oil, paprika, garlic powder, onion powder, thyme, salt, and pepper.
- 3. Spread chicken on a parchment lined baking sheet.
- 4. Bake for 15-20 minutes, or until chicken reaches 165°F (74°C).
- 5. Cook quinoa in chicken broth according to package directions.
- 6. Dice bell peppers, zucchini, and red onion. Halve tomatoes and chop parsley.
- 7. Combine cooked chicken, quinoa, and vegetables in a large bowl.
- 8. Gently toss everything together.
- 9. Serve immediately, garnished with lemon wedges if desired.
