  • 1 cup quinoa (or rice), uncooked
  • 2 cups chicken broth
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 zucchini, diced
  • 1/2 red onion, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • Lemon wedges, for serving (optional)

Instructions

  2. 2. Toss chicken with olive oil, paprika, garlic powder, onion powder, thyme, salt, and pepper.
  3. 3. Spread chicken on a parchment lined baking sheet.
