- 1.5 pounds cod fillets, skinless
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 6 cups chicken or vegetable broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1 pound Yukon gold potatoes, peeled and diced
- 1 cup heavy cream or half and half
- Fresh parsley, chopped, for garnish
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place cod fillets on the baking sheet. Drizzle with 1 tablespoon olive oil, and season with 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/4 teaspoon paprika.
- Bake for 12 to 15 minutes, or until cod is cooked through and flakes easily with a fork.
- While cod is baking, heat 1 tablespoon olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery, and cook until softened, about 5 to 7 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Pour in the chicken or vegetable broth and add the diced tomatoes, thyme, and rosemary. Bring to a simmer.
- Add the diced potatoes and simmer until they are tender, about 10 to 12 minutes.
- Once the cod is cooked, gently flake it into bite sized pieces.
- Add the flaked baked cod to the soup. Stir in the heavy cream or half and half. Season with salt and pepper to taste. Simmer for another 5 minutes to allow the flavors to meld together.
- Ladle the baked cod soup into bowls. Garnish with fresh parsley and serve hot.
