  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 6 large flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup shredded cheese (cheddar, Monterey Jack, or your favorite)
  • 1/4 cup sour cream or Greek yogurt
  • 1/4 cup salsa (optional)
  • 2 tablespoons chopped cilantro (optional)

Instructions

  1. 1. Preheat your oven to 400°F (200°C). Lightly grease a baking sheet with cooking spray.
  2. 2. In a small bowl, whisk together olive oil, paprika, garlic powder, salt, pepper, and lemon juice.
  3. 3. Place cod fillets on the prepared baking sheet. Pour or brush the olive oil mixture evenly over the cod.
  4. 4. Bake for 12 to 15 minutes, or until the cod is cooked through and flakes easily with a fork. Cooking time will vary depending on the thickness of the fillets.
  5. 5. While the cod is baking, warm the tortillas. You can do this in a dry skillet over medium heat for a few seconds per side, or wrap them in a damp paper towel and microwave for 20 seconds.
