  • 2 cups cooked rice (white, brown, or your preference)
  • 1 bell pepper, diced
  • 1 red onion, diced
  • 1 cup corn kernels (fresh or frozen)
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1/2 cup barbecue sauce
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • Shredded cheese (cheddar, Monterey Jack, or your favorite), optional
  • Sour cream or Greek yogurt, optional
  • Chopped cilantro, optional
  • Diced avocado, optional
  • Pickled onions, optional
  • Hot sauce, optional

Instructions

  1. 1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. 2. In a large bowl, combine the shredded or diced turkey with olive oil, smoked paprika, garlic powder, salt, and pepper. Toss to coat evenly.
  3. 3. In a separate bowl, mix together the barbecue sauce, honey, and apple cider vinegar for the sauce.
  4. 4. Spread the cooked rice evenly in the prepared baking dish.
  5. 5. Top the rice with the seasoned turkey, diced bell pepper, red onion, corn kernels, and black beans.
  6. 6. Pour the barbecue sauce mixture over the turkey and vegetables.
