- For the Crust:
- 1 1/2 cups all purpose flour
- 1/2 cup (1 stick) cold unsalted butter, cubed
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1 large egg yolk
- 2 tablespoons ice water
- For the Filling:
- 4 cups mixed berries (strawberries, blueberries, raspberries, blackberries)
- 1/2 cup granulated sugar
- 3 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1/4 teaspoon almond extract (optional)
Instructions
- 1. Preheat oven to 375°F (190°C). Grease and flour an 8×8 inch baking pan.
- 2. In a large bowl, whisk together the flour, sugar, and salt for the crust. Cut in the cold butter until the mixture resembles coarse crumbs.
- 3. In a small bowl, whisk together the egg yolk and ice water. Add this mixture to the flour mixture and stir until just combined.
- 4. Form the dough into a disk, wrap it in plastic wrap, and chill in the refrigerator for at least 30 minutes.
- 5. Divide the chilled dough in half. Press one half of dough into the prepared pan to form an even layer.
- 6. Par bake the crust for 10-12 minutes, or until lightly golden.
- 7. While the crust is baking, prepare the berry filling. In a large bowl, gently combine the mixed berries, sugar, cornstarch, lemon juice, and almond extract (if using).
- 8. Pour the berry filling over the par baked crust. Crumble the remaining dough evenly over the berry filling.
- 9. Bake for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
- 10. Let the bars cool completely in the pan before cutting into squares.
