  • 1 1/2 cups all purpose flour
  • 1/2 cup (1 stick) cold unsalted butter, cubed
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 large egg yolk
  • 2 tablespoons ice water
  • For the Filling:
  • 4 cups mixed berries (strawberries, blueberries, raspberries, blackberries)
  • 1/2 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1/4 teaspoon almond extract (optional)

Instructions

  1. 1. Preheat oven to 375°F (190°C). Grease and flour an 8×8 inch baking pan.
  2. 2. In a large bowl, whisk together the flour, sugar, and salt for the crust. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. 3. In a small bowl, whisk together the egg yolk and ice water. Add this mixture to the flour mixture and stir until just combined.
  4. 4. Form the dough into a disk, wrap it in plastic wrap, and chill in the refrigerator for at least 30 minutes.
  5. 5. Divide the chilled dough in half. Press one half of dough into the prepared pan to form an even layer.
  6. 6. Par bake the crust for 10-12 minutes, or until lightly golden.
  7. 7. While the crust is baking, prepare the berry filling. In a large bowl, gently combine the mixed berries, sugar, cornstarch, lemon juice, and almond extract (if using).
  8. 8. Pour the berry filling over the par baked crust. Crumble the remaining dough evenly over the berry filling.
  9. 9. Bake for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
  10. 10. Let the bars cool completely in the pan before cutting into squares.
