Ingredients

  • For the Crust:n1 1/2 cups graham cracker crumbsn5 tablespoons unsalted butter, meltedn1/4 cup granulated sugarnnFor the Filling:n24 ounces cream cheese, softenedn1 1/4 cups granulated sugarn1 teaspoon vanilla extractn2 large eggsn1/2 cup sour creamnnFor the Berry Topping:n2 cups mixed berries (strawberries, blueberries, raspberries, blackberries)n1/4 cup granulated sugarn1 tablespoon lemon juicen1 tablespoon cornstarch

Instructions

  1. Preheat oven to 350°F (175°C).nIn a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture firmly into the bottom of a 9 inch springform pan.nBake crust for 8 minutes. Remove from oven and let cool slightly.nIn a large bowl, beat cream cheese and sugar until smooth and creamy. Blend in vanilla extract.nAdd eggs one at a time, mixing well after each addition. Gently stir in sour cream.nPour the filling over the prebaked crust.nBake cheesecake for 50 60 minutes, or until the center is just slightly jiggly.nTurn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.nWhile the cheesecake is cooling, combine mixed berries, sugar, lemon juice, and cornstarch in a saucepan.nCook over medium heat, stirring constantly, until the berries release their juices and the sauce thickens, about 5 7 minutes.nLet the berry topping cool completely.nOnce the cheesecake has cooled in the oven, remove it and refrigerate for at least 4 hours, or preferably overnight.nBefore serving, spread the cooled berry topping evenly over the cheesecake.
