  • 1 tablespoon cornstarch

Instructions

  1. Prepare the Crust: In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of a 9 inch springform pan.
  2. Bake the Crust: Bake the crust in a preheated oven at 350°F (175°C) for 8 minutes. Remove from oven and let cool.
  3. Make the Filling: In a large bowl, beat cream cheese and sugar until smooth and creamy. Add vanilla extract and mix well.
  4. Add Eggs: Beat in eggs one at a time, mixing well after each addition. Stir in sour cream until just combined. Be careful not to overmix the batter.
  5. Pour the Filling: Pour the cream cheese mixture over the cooled crust.
  6. Bake the Cheesecake: Bake in a preheated oven at 325°F (160°C) for 60 to 70 minutes, or until the edges are set and the center is slightly jiggly.
  7. Cool Gradually: Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour. This helps prevent cracking.
  8. Prepare the Berry Topping: While the cheesecake is baking, prepare the berry topping. In a medium saucepan, combine berries, sugar, lemon juice, and cornstarch.
  9. Cook the Topping: Cook over medium heat, stirring constantly, until the berries release their juices and the sauce thickens. Remove from heat and let cool slightly.
  10. Chill: Remove the cheesecake from the oven and let it cool completely at room temperature. Then, refrigerate for at least 4 hours, or preferably overnight.
