- ½ teaspoon baking soda

- ½ cup (1 stick) unsalted butter, softened
- ¾ cup granulated sugar
- ¼ cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 ½ cups mixed berries (strawberries, blueberries, raspberries), chopped if large
- 2 tablespoons granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
Instructions
- 1. Prep the Berries: In a medium bowl, combine the chopped berries, 2 tablespoons of sugar, cornstarch, and lemon juice. Gently toss to coat. Set aside.
- 2. Cream the Butter and Sugars: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy using an electric mixer.
- 3. Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.
- 4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
- 5. Gradually Add Dry Ingredients to Wet Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- 6. Chill the Dough: Cover the dough with plastic wrap and chill in the refrigerator for at least 30 minutes. This helps prevent the cookies from spreading too much during baking.
- 7. Preheat Oven: Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
- 8. Scoop and Fill: Scoop rounded tablespoons of dough onto the prepared baking sheets, leaving some space between each cookie. Use your thumb or the back of a spoon to create a well in the center of each cookie.
- 9. Fill with Berry Mixture: Spoon about a tablespoon of the berry mixture into the well of each cookie.
- 10. Bake: Bake for 10 to 12 minutes, or until the edges of the cookies are lightly golden brown and the berry filling is bubbly.
- 11. Cool: Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
