- 2 cups all purpose flour
- ¾ cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup buttermilk
- ⅓ cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest
- 1 ½ cups mixed berries (fresh or frozen)
- 1 tablespoon all purpose flour (for tossing with berries)
Instructions
- Preheat oven to 400°F (200°C). Line a muffin tin with paper liners or grease it.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together buttermilk, oil, egg, vanilla extract, and lemon zest.
- Gently fold the wet ingredients into the dry ingredients until just combined.
- In a small bowl, toss the berries with 1 tablespoon of flour.
- Gently fold the floured berries into the muffin batter.
- Spoon the batter into the muffin tin, filling each cup about ¾ full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring to a wire rack to cool completely.
