These homemade berry muffins are light, fluffy, and bursting with juicy berries. This recipe is easy to make and perfect for breakfast, brunch, or a snack.

- 2 cups all purpose flour
- ¾ cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ cup unsalted butter, melted
- 1 large egg, lightly beaten
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 ½ cups mixed berries (fresh or frozen), such as blueberries, raspberries, and blackberries
- 2 tablespoons granulated sugar (optional topping)
- ½ teaspoon ground cinnamon (optional topping)
Instructions
- Preheat your oven to 400°F (200°C). Line a 12 cup muffin tin with paper liners or grease well.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, combine the melted butter, egg, milk, and vanilla extract. Whisk until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
- Gently fold in the berries. Overmixing at this stage can cause the berries to bleed and the muffins to become tough.
- If using, mix together the sugar and cinnamon for the topping.
- Fill the muffin liners about ¾ full with batter. Sprinkle the tops with the sugar cinnamon mixture, if desired.
- Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean. The muffins should be golden brown on top.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature.
