Instructions
- In a medium saucepan, combine the mixed berries, granulated sugar, cornstarch, water, vanilla extract, and salt.
- Stir well to ensure the cornstarch is dissolved.
- Place the saucepan over medium heat and bring the mixture to a simmer, stirring constantly to prevent sticking.
- Continue to simmer for about 5-7 minutes, or until the berry pudding has thickened.
- Remove from heat and cool slightly.
- In a chilled mixing bowl, combine heavy cream, powdered sugar, and vanilla extract.
- Beat with an electric mixer until stiff peaks form.
- Spoon berry pudding into serving dishes.
