- ¾ cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup grated carrots, packed
- ½ cup chopped walnuts or pecans (optional)
- 4 ounces cream cheese, softened
- ¼ cup (½ stick) unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 2 4 tablespoons milk or cream, as needed for consistency
Instructions
- Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and ginger.
- In a large bowl, cream together butter and brown sugar until light and fluffy.
- Beat in egg and vanilla extract until well combined.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Fold in grated carrots and chopped nuts (if using) until evenly distributed.
- Drop rounded tablespoons of dough onto prepared baking sheets, leaving 2 inches between cookies.
- Bake for 10 12 minutes, or until edges are lightly golden.
- Let cookies cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
- While cookies are cooling, prepare cream cheese frosting.
- In a large bowl, beat together softened cream cheese and butter until smooth and creamy.
- Gradually add powdered sugar, beating until smooth. Stir in vanilla extract.
- Add milk or cream, one tablespoon at a time, until frosting reaches your desired consistency.
- Once cookies are completely cool, frost with cream cheese frosting.
