  • ½ cup chopped walnuts or pecans (optional)
  • 4 ounces cream cheese, softened
  • ¼ cup (½ stick) unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 4 tablespoons milk or cream, as needed for consistency

Instructions

  1. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and ginger.
  3. In a large bowl, cream together butter and brown sugar until light and fluffy.
  4. Beat in egg and vanilla extract until well combined.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. Fold in grated carrots and chopped nuts (if using) until evenly distributed.
  7. Drop rounded tablespoons of dough onto prepared baking sheets, leaving 2 inches between cookies.
  8. Bake for 10 12 minutes, or until edges are lightly golden.
  9. Let cookies cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
  10. While cookies are cooling, prepare cream cheese frosting.
  11. In a large bowl, beat together softened cream cheese and butter until smooth and creamy.
  12. Gradually add powdered sugar, beating until smooth. Stir in vanilla extract.
  13. Add milk or cream, one tablespoon at a time, until frosting reaches your desired consistency.
  14. Once cookies are completely cool, frost with cream cheese frosting.
