- 2 cups mixed fruit (apples, pears, berries), peeled and chopped
- 1/4 cup granulated sugar
- 2 tablespoons all-purpose flour (or gluten-free blend)

- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 cup rolled oats
- 1/2 cup all-purpose flour (or gluten-free blend)
- 1/2 cup packed brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup (1 stick) cold unsalted butter, cut into cubes
Instructions
- Preheat oven to 375°F (190°C). Grease an 8×8 inch baking dish.
- In a large bowl, combine the grated carrots, mixed fruit, granulated sugar, flour, cinnamon, ginger, nutmeg, and lemon juice. Mix well and pour into the baking dish.
- In a separate bowl, combine the rolled oats, flour, brown sugar, cinnamon, and salt.
- Add the cold butter cubes to the oat mixture. Cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Sprinkle the crisp topping evenly over the fruit and carrot filling.
- Bake for 30 to 35 minutes, or until the topping is golden brown and the filling is bubbly.
- Let the carrot fruit crisp cool slightly before serving.
