  • 3/4 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups grated carrots
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. 1. Preheat oven to 375°F (190°C). Line a 12 cup muffin tin with paper liners or grease it well.
  2. 2. In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.
  3. 3. In a separate bowl, whisk together the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract.
  4. 4. Add the wet ingredients to the dry ingredients and mix until just combined. Be careful not to overmix.
  5. 5. Fold in the grated carrots and nuts, if using.
  6. 6. Fill the muffin cups about 2/3 full.
  7. 7. Bake for 1820 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. 8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  9. 9. If making the glaze, beat the cream cheese and butter together until smooth. Gradually add the powdered sugar, alternating with the milk, until smooth and creamy. Stir in the vanilla extract.
  10. 10. Drizzle the glaze over the cooled muffins (optional).
