- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 6 cups chicken broth
- 1 pound cooked ham, cubed
- 1 cup frozen peas
- 1 cup frozen corn
- 1/2 cup heavy cream
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion, carrots, and celery and cook until softened, about 5-7 minutes.
- Add the garlic and cook for another minute until fragrant.
- Pour in the chicken broth and bring to a simmer.
- Add the cubed ham and continue to simmer for 10 minutes, allowing the flavors to meld.
- Stir in the frozen peas and corn. Cook for another 5 minutes, or until the vegetables are tender.
- Stir in the heavy cream and parsley. Season with salt and pepper to taste.
- Ladle into bowls and serve immediately, garnished with Parmesan cheese and crusty bread if desired.
