  • 1 onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 pound cooked ham, cubed
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion, carrots, and celery and cook until softened, about 5-7 minutes.
  2. Add the garlic and cook for another minute until fragrant.
  3. Pour in the chicken broth and bring to a simmer.
  4. Add the cubed ham and continue to simmer for 10 minutes, allowing the flavors to meld.
  5. Stir in the frozen peas and corn. Cook for another 5 minutes, or until the vegetables are tender.
  6. Stir in the heavy cream and parsley. Season with salt and pepper to taste.
  7. Ladle into bowls and serve immediately, garnished with Parmesan cheese and crusty bread if desired.
