- 1 cup spinach or baby kale, chopped
- 1/2 red bell pepper, diced

- 1 avocado, sliced
- 6 burrito-size tortillas

Instructions
- 1. Prepare the Scrambled Eggs: In a bowl, whisk together eggs, milk/cream, salt, and pepper. Melt butter in a nonstick skillet over medium heat. Pour in egg mixture and cook, stirring occasionally, until eggs are set but still slightly moist. Remove from heat.
- 2. Make the Ham and Cheese Filling: In a medium bowl, combine diced ham, shredded cheddar cheese, green onions, and mayonnaise or Greek yogurt. Mix well.
- 3. Warm the Tortillas: Either warm tortillas in a dry skillet over medium heat for a few seconds per side, or microwave them for 15 seconds wrapped in a damp paper towel.
- 4. Assemble the Easter Brunch Wraps: Lay a warm tortilla on a flat surface. Spread a layer of scrambled eggs down the center. Top with ham and cheese filling, spinach/kale, red bell pepper, cilantro, and avocado slices. Drizzle with hot sauce, if desired.
- 5. Wrap it Up: Fold in the sides of the tortilla, then fold up the bottom and roll tightly to enclose the filling.
