Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 cups powdered sugar
  • 1/2 cup milk (or more, as needed)
  • Food coloring (optional)
  • Easter candies (jelly beans, chocolate eggs, sprinkles, etc.)

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix!
  6. Roll out the dough on a lightly floured surface to about 1/4 inch thickness.
  7. Use Easter themed cookie cutters (bunny, egg, chick) to cut out shapes.
  8. Place the cookies on the prepared baking sheets, leaving about 1 inch between each cookie.
  9. Bake for 8 10 minutes, or until the edges are lightly golden brown.
  10. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  11. While the cookies are cooling, prepare the glaze. In a medium bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Add more milk, one tablespoon at a time, until you reach your desired consistency.
  12. If desired, divide the glaze into separate bowls and tint each bowl with food coloring.
  13. Once the cookies are completely cool, spread the glaze over the top of each cookie.
  14. Immediately decorate the glazed cookies with Easter candies and sprinkles.
  15. Let the glaze set completely before serving.
