- 1 cup (2 sticks) unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 cups powdered sugar
- 1/2 cup milk (or more, as needed)
- Food coloring (optional)
- Easter candies (jelly beans, chocolate eggs, sprinkles, etc.)
Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix!
- Roll out the dough on a lightly floured surface to about 1/4 inch thickness.
- Use Easter themed cookie cutters (bunny, egg, chick) to cut out shapes.
- Place the cookies on the prepared baking sheets, leaving about 1 inch between each cookie.
- Bake for 8 10 minutes, or until the edges are lightly golden brown.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- While the cookies are cooling, prepare the glaze. In a medium bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Add more milk, one tablespoon at a time, until you reach your desired consistency.
- If desired, divide the glaze into separate bowls and tint each bowl with food coloring.
- Once the cookies are completely cool, spread the glaze over the top of each cookie.
- Immediately decorate the glazed cookies with Easter candies and sprinkles.
- Let the glaze set completely before serving.
