  • ¼ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Food coloring (optional)

Instructions

  1. 1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. 2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. 3. In a separate bowl, combine the buttermilk, vegetable oil, egg, and vanilla extract. Whisk until combined.
  4. 4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. 5. Gently fold in the rainbow sprinkles.
  6. 6. Fill each muffin liner about two thirds full.
  7. 7. Bake for 18 to 20 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. 8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  9. 9. While the muffins are cooling, prepare the cream cheese frosting. In a mixing bowl, beat the softened cream cheese and butter until smooth and creamy.
  10. 10. Gradually add the powdered sugar, beating until well combined. Stir in the vanilla extract and food coloring, if desired.
