- ¾ cup granulated sugar
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup buttermilk
- ⅓ cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- ½ cup rainbow candy sprinkles
- For the Cream Cheese Frosting:
- 4 ounces cream cheese, softened
- ¼ cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- Food coloring (optional)
Instructions
- 1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- 2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- 3. In a separate bowl, combine the buttermilk, vegetable oil, egg, and vanilla extract. Whisk until combined.
- 4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- 5. Gently fold in the rainbow sprinkles.
- 6. Fill each muffin liner about two thirds full.
- 7. Bake for 18 to 20 minutes, or until a wooden skewer inserted into the center comes out clean.
- 8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
- 9. While the muffins are cooling, prepare the cream cheese frosting. In a mixing bowl, beat the softened cream cheese and butter until smooth and creamy.
- 10. Gradually add the powdered sugar, beating until well combined. Stir in the vanilla extract and food coloring, if desired.
- 11. Once the muffins are completely cool, frost them generously with the cream cheese frosting.
- 12. Decorate with extra sprinkles or other Easter themed decorations.
