Ingredients

  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup (1 1/2 sticks) unsalted butter, softened
  • 3/4 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup gluten free rolled oats
  • 1 cup chocolate chips (gluten free)
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper.
  2. In a medium bowl, whisk together the gluten free flour, baking soda, and salt.
  3. In a large bowl, cream together the softened butter, light brown sugar, and granulated sugar.
  4. Beat in the egg and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in the gluten free rolled oats, chocolate chips, and chopped walnuts (if using).
  7. Press the dough evenly into the prepared baking pan.
  8. Bake for 20 25 minutes, or until the edges are golden brown.
  9. Let the bars cool completely in the pan before lifting them out and cutting into bars.
