- 1 1/2 cups gluten free all purpose flour blend (with xanthan gum)
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup (1 1/2 sticks) unsalted butter, softened
- 3/4 cup packed light brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup gluten free rolled oats
- 1 cup chocolate chips (gluten free)
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper.
- In a medium bowl, whisk together the gluten free flour, baking soda, and salt.
- In a large bowl, cream together the softened butter, light brown sugar, and granulated sugar.
- Beat in the egg and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the gluten free rolled oats, chocolate chips, and chopped walnuts (if using).
- Press the dough evenly into the prepared baking pan.
- Bake for 20 25 minutes, or until the edges are golden brown.
- Let the bars cool completely in the pan before lifting them out and cutting into bars.
