- 1 1/2 cups gluten free all purpose flour blend (with xanthan gum)
- 1/2 cup packed brown sugar
- 1/2 cup (1 stick) cold unsalted butter, cubed
- 1/4 teaspoon salt
- 1 cup old fashioned rolled oats (certified gluten free)
- 3/4 cup chopped nuts (walnuts, pecans, or almonds)
- 3/4 cup shredded coconut (unsweetened)
- 1/2 cup dried cranberries or raisins
- 1/2 cup chocolate chips (gluten free)
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). In a large bowl, combine the gluten free flour, brown sugar, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Press the crumb mixture firmly and evenly into the bottom of an 8×8 inch baking pan lined with parchment paper. Bake for 12-15 minutes, or until lightly golden.
- While the crust is baking, in a separate bowl, combine the rolled oats, chopped nuts, shredded coconut, dried cranberries, chocolate chips, honey (or maple syrup), melted coconut oil, vanilla extract, and salt. Mix well until everything is evenly coated.
- Once the crust is lightly golden, remove it from the oven. Sprinkle the oat mixture evenly over the baked crust. Gently press down to compact the filling.
- Return the pan to the oven and bake for another 20-25 minutes, or until the topping is golden brown and the edges are set.
- Let the bars cool completely in the pan before lifting them out using the parchment paper and cutting them into squares or bars.
