- 1 cup (120g) gluten free all purpose flour blend (with xanthan gum)
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, softened
- 1/2 cup (100g) granulated sugar
- 1/4 cup (50g) packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract (optional, but recommended)
- 1/2 cup chocolate chips (dairy free if needed) – Optional
- 1/4 cup chopped nuts (walnuts, pecans, or almonds) – Optional
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the gluten free flour, baking soda, and salt.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg, vanilla extract, and almond extract (if using).
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Stir in desired mix ins, such as chocolate chips or nuts.
- Drop by rounded tablespoons onto the prepared baking sheet, leaving about 2 inches between each cookie.
- Bake for 8-10 minutes, or until the edges are lightly golden brown and the centers are set.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
