Ingredients

  • 1 cup (120g) almond flour
  • ½ cup (50g) oat flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup (113g) unsalted butter, softened
  • ½ cup (100g) granulated sugar
  • ¼ cup (50g) packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup (170g) gluten free chocolate chips
  • Optional: Flaky sea salt for sprinkling

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the almond flour, oat flour, baking soda, and salt.
  3. In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Fold in the gluten free chocolate chips.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
  8. If desired, sprinkle the cookies with flaky sea salt.
  9. Bake for 8 to 10 minutes, or until the edges are golden brown and the centers are still slightly soft.
  10. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
