These easy gluten free cookies are soft, chewy, and incredibly easy to make with almond and oat flour.

- 1 cup (120g) almond flour
- ½ cup (50g) oat flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup (113g) unsalted butter, softened
- ½ cup (100g) granulated sugar
- ¼ cup (50g) packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup (170g) gluten free chocolate chips
- Optional: Flaky sea salt for sprinkling
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the almond flour, oat flour, baking soda, and salt.
- In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Fold in the gluten free chocolate chips.
- Drop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
- If desired, sprinkle the cookies with flaky sea salt.
- Bake for 8 to 10 minutes, or until the edges are golden brown and the centers are still slightly soft.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
