Ingredients

- 2 cups gluten free flour blend (with xanthan gum)
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup milk (dairy or non dairy)
- 1/2 cup melted butter or oil (unsalted butter, coconut oil, or vegetable oil)
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a large bowl, whisk together the gluten free flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the eggs, milk, melted butter or oil, and vanilla extract. Add lemon zest if using.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50 60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the loaf cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
