  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the gluten free flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the eggs, milk, melted butter or oil, and vanilla extract. Add lemon zest if using.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
