- 2 large eggs
- 1 cup unsweetened applesauce
- 1/2 cup melted coconut oil (or other neutral oil)
- 1 teaspoon vanilla extract
- 1/2 cup almond milk

Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a large bowl, whisk together the gluten-free flour, granulated sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the eggs, applesauce, melted coconut oil, vanilla extract, and almond milk.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
- Pour the batter into the prepared loaf pan and spread evenly.
