  • 2 teaspoons baking powder

  • ½ cup milk (dairy or non dairy)
  • ⅓ cup melted butter or coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup blueberries (optional)
  • ½ cup chocolate chips (optional)
  • ½ cup chopped nuts (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a 12 cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the gluten free flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the milk, melted butter or coconut oil, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. If using, gently fold in your favorite mix ins like blueberries, chocolate chips, or nuts.
  6. Fill each muffin cup about ¾ full.
  7. Bake for 18 20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
