- 2 1/2 cups Gluten Free All-Purpose Flour Blend (with xanthan gum)
- 3/4 cup Granulated Sugar
- 2 teaspoons Baking Powder
- 1/2 teaspoon Baking Soda
- 1/4 teaspoon Salt
- 2 Large Eggs
- 1/2 cup Melted Butter (or Coconut Oil)
- 1 cup Milk (or Dairy Free Milk)
- 1 teaspoon Vanilla Extract
Instructions
- Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
- In a large bowl, whisk together the gluten free flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the eggs, melted butter (or coconut oil), milk (or dairy free milk), and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Fill each muffin cup about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
