Ingredients

  • 1 1/2 cups gluten free all purpose flour blend (with xanthan gum)
  • 3/4 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup milk (dairy or non dairy)
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup blueberries, chocolate chips, or chopped nuts

Instructions

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the gluten free flour, sugar, baking soda, baking powder, and salt.
  3. In a separate bowl, whisk together the melted butter, eggs, milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  5. Gently fold in any desired mix ins like blueberries or chocolate chips.
  6. Fill the muffin liners about ¾ full with batter.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
