  • 1 cup granulated sugar
  • ½ cup packed brown sugar
  • ¾ cup coconut oil, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup unsweetened applesauce
  • 2 cups grated carrots
  • ½ cup chopped walnuts or pecans (optional)
  • For the Cream Cheese Frosting:
  • 8 ounces cream cheese, softened
  • ½ cup (1 stick) unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 23 tablespoons milk or cream, as needed

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch pan.
  2. In a large bowl, whisk together gluten free flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a separate bowl, combine granulated sugar, brown sugar, and melted coconut oil. Beat until combined.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla and applesauce.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. Fold in grated carrots and nuts (if using).
  7. Pour batter into prepared pan and spread evenly.
  8. Bake for 30-35 minutes, or until a skewer comes out clean. Let cool completely.
  9. Prepare cream cheese frosting: beat cream cheese and butter until smooth.
  10. Gradually add powdered sugar, beating on low speed. Stir in vanilla.
  11. Add milk or cream until desired consistency.
  12. Once cake is cool, frost with cream cheese frosting.
