- 2 cups milk (dairy or non dairy)
- ½ cup granulated sugar
- ¼ cup cornstarch
- ¼ teaspoon salt
- 2 large egg yolks
- 2 tablespoons butter (dairy or non dairy)
- 1 teaspoon vanilla extract
Instructions
- In a medium saucepan, whisk together the milk, sugar, cornstarch, and salt.
- Place the saucepan over medium heat and cook, stirring constantly, until the mixture begins to thicken, about 5 7 minutes.
- In a small bowl, whisk the egg yolks. Temper the egg yolks by slowly drizzling about ¼ cup of the hot milk mixture into the bowl while whisking constantly.
- Pour the tempered egg yolk mixture back into the saucepan with the remaining milk mixture. Cook, stirring constantly, for an additional 1 2 minutes, or until the pudding is thick and smooth.
- Remove the saucepan from the heat and stir in the butter and vanilla extract. Stir until the butter is completely melted and incorporated.
- Pour the gluten free pudding into individual serving dishes or a large bowl. Cover the surface of the pudding with plastic wrap to prevent a skin from forming.
- Refrigerate for at least 2 hours, or until completely chilled and set.
