Ingredients

  • 2 cups milk (dairy or non dairy)
  • ½ cup granulated sugar
  • ¼ cup cornstarch
  • ¼ teaspoon salt
  • 2 large egg yolks
  • 2 tablespoons butter (dairy or non dairy)
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium saucepan, whisk together the milk, sugar, cornstarch, and salt.
  2. Place the saucepan over medium heat and cook, stirring constantly, until the mixture begins to thicken, about 5 7 minutes.
  3. In a small bowl, whisk the egg yolks. Temper the egg yolks by slowly drizzling about ¼ cup of the hot milk mixture into the bowl while whisking constantly.
  4. Pour the tempered egg yolk mixture back into the saucepan with the remaining milk mixture. Cook, stirring constantly, for an additional 1 2 minutes, or until the pudding is thick and smooth.
  5. Remove the saucepan from the heat and stir in the butter and vanilla extract. Stir until the butter is completely melted and incorporated.
  6. Pour the gluten free pudding into individual serving dishes or a large bowl. Cover the surface of the pudding with plastic wrap to prevent a skin from forming.
  7. Refrigerate for at least 2 hours, or until completely chilled and set.
