Ingredients

  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 1/2 cups milk (dairy or non dairy both work)
  • 2 large egg yolks, lightly beaten
  • 2 tablespoons butter (dairy or non dairy both work)
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium saucepan, whisk together the sugar, cornstarch, and salt.
  2. Gradually whisk in the milk until smooth.
  3. Cook over medium heat, stirring constantly, until the mixture comes to a simmer.
  4. Reduce heat to low and continue to cook, stirring constantly, for 1 minute, or until the mixture has thickened significantly.
  5. Remove from heat and temper the egg yolks by whisking a small amount of the hot milk mixture into the yolks. Then, whisk the tempered yolks back into the saucepan.
  6. Cook over low heat, stirring constantly, for 1 minute more.
  7. Remove from heat and stir in the butter and vanilla until smooth.
  8. Pour the pudding into individual serving dishes or one larger bowl.
  9. Cover with plastic wrap, pressing the wrap directly onto the surface of the pudding to prevent a skin from forming.
  10. Refrigerate for at least 2 hours, or until chilled.
