This creamy and delicious gluten free pudding is easy to make with simple ingredients. A perfect comforting dessert!

- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 2 1/2 cups milk (dairy or non dairy both work)
- 2 large egg yolks, lightly beaten
- 2 tablespoons butter (dairy or non dairy both work)
- 1 teaspoon vanilla extract
Instructions
- In a medium saucepan, whisk together the sugar, cornstarch, and salt.
- Gradually whisk in the milk until smooth.
- Cook over medium heat, stirring constantly, until the mixture comes to a simmer.
- Reduce heat to low and continue to cook, stirring constantly, for 1 minute, or until the mixture has thickened significantly.
- Remove from heat and temper the egg yolks by whisking a small amount of the hot milk mixture into the yolks. Then, whisk the tempered yolks back into the saucepan.
- Cook over low heat, stirring constantly, for 1 minute more.
- Remove from heat and stir in the butter and vanilla until smooth.
- Pour the pudding into individual serving dishes or one larger bowl.
- Cover with plastic wrap, pressing the wrap directly onto the surface of the pudding to prevent a skin from forming.
- Refrigerate for at least 2 hours, or until chilled.
