- 1/2 cup powdered sugar
- 2 cups gluten free all purpose flour blend (with xanthan gum)
- 1/4 teaspoon salt
- 1 teaspoon pure vanilla extract
Instructions
- Preheat oven to 325°F (160°C).
- In a large bowl, cream together butter and powdered sugar until light and fluffy.
- Add vanilla extract and mix well.
- In a separate bowl, whisk together gluten free flour and salt.
- Gradually add dry ingredients to wet ingredients, mixing on low until just combined.
- Turn dough out onto lightly floured surface and pat into a circle or rectangle, about 1/2 inch thick.
- Use cookie cutters to cut out shapes or cut into squares.
- Place cookies on a parchment-lined baking sheet.
- Bake for 18-22 minutes, until edges are lightly golden brown.
- Let cool on baking sheet for a few minutes, then transfer to a wire rack to cool completely.
