Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2 cups gluten free all purpose flour blend (with xanthan gum)
  • 1/4 teaspoon salt
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a large bowl, cream together butter and powdered sugar until light and fluffy.
  3. Add vanilla extract and mix well.
  4. In a separate bowl, whisk together gluten free flour and salt.
  5. Gradually add dry ingredients to wet ingredients, mixing on low until just combined.
  6. Turn dough out onto lightly floured surface and pat into a circle or rectangle, about 1/2 inch thick.
  7. Use cookie cutters to cut out shapes or cut into squares.
  8. Place cookies on a parchment-lined baking sheet.
  9. Bake for 18-22 minutes, until edges are lightly golden brown.
  10. Let cool on baking sheet for a few minutes, then transfer to a wire rack to cool completely.
