- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 2 cups gluten free all purpose flour (with xanthan gum)
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 325°F (160°C).
- In a large bowl, cream together the softened butter, sugar, and salt until light and fluffy. This usually takes about 3 to 5 minutes with an electric mixer.
- Stir in the vanilla extract.
- Gradually add the gluten free flour, mixing on low speed until just combined. Be careful not to overmix.
- Turn the dough out onto a lightly floured surface (use gluten free flour). Gently knead it a few times to bring it together into a smooth ball.
- Roll the dough out to about 1/2 inch thickness.
- Use cookie cutters to cut out desired shapes. Alternatively, you can cut the dough into squares or rectangles with a knife.
- Carefully transfer the cookies to an ungreased baking sheet.
- Bake for 18-20 minutes, or until the edges are lightly golden brown.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
