Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a large bowl, cream together the softened butter and powdered sugar until smooth and fluffy.
  3. Add the salt and vanilla extract (if using) and mix well.
  4. Gradually add the gluten free flour, mixing on low speed until just combined. Be careful not to overmix!
  5. Gently press the dough into an 8 inch square baking pan. You can also use a round cake pan. Ensure it’s evenly distributed.
  6. Prick the surface of the dough all over with a fork. This helps prevent it from puffing up during baking and creates a tender crumb.
  7. Sprinkle the top with granulated sugar if desired.
