- 1 cup (2 sticks) unsalted butter, softened
- ½ cup powdered sugar
- ¼ teaspoon salt
- 2 cups gluten free all purpose flour blend (ensure it contains xanthan gum)
- Optional: 1 teaspoon vanilla extract
- Optional: granulated sugar for sprinkling
Instructions
- Preheat your oven to 325°F (160°C).
- In a large bowl, cream together the softened butter and powdered sugar until smooth and fluffy.
- Add the salt and vanilla extract (if using) and mix well.
- Gradually add the gluten free flour, mixing on low speed until just combined. Be careful not to overmix!
- Gently press the dough into an 8 inch square baking pan. You can also use a round cake pan. Ensure it’s evenly distributed.
- Prick the surface of the dough all over with a fork. This helps prevent it from puffing up during baking and creates a tender crumb.
- Sprinkle the top with granulated sugar if desired.
- Bake for 30 to 35 minutes, or until the edges are lightly golden brown.
- Let the shortbread cool completely in the pan before cutting it into squares or triangles. Enjoy!
