- 1 cup (227g) unsalted butter, softened
- ½ cup (100g) granulated sugar
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- 2 cups (240g) gluten free all purpose flour blend (with xanthan gum)
- ½ cup (60g) almond flour
Instructions
- Preheat the oven to 325°F (160°C). Line an 8 inch square baking pan with parchment paper.
- Cream together softened butter and sugar until light and fluffy.
- Add salt and vanilla extract and mix.
- Whisk together gluten free flour and almond flour.
- Gradually add dry ingredients to wet ingredients. Mix until just combined.
- Press dough evenly into the prepared pan.
- Prick the surface of the dough with a fork.
- Bake 30 35 minutes, or until edges are lightly golden brown.
- Let cool completely in the pan before lifting out.
- Cut into squares or rectangles and serve.
