Ingredients

  • 1 cup (227g) unsalted butter, softened
  • ½ cup (100g) granulated sugar
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups (240g) gluten free all purpose flour blend (with xanthan gum)
  • ½ cup (60g) almond flour

Instructions

  1. Preheat the oven to 325°F (160°C). Line an 8 inch square baking pan with parchment paper.
  2. Cream together softened butter and sugar until light and fluffy.
  3. Add salt and vanilla extract and mix.
  4. Whisk together gluten free flour and almond flour.
  5. Gradually add dry ingredients to wet ingredients. Mix until just combined.
  6. Press dough evenly into the prepared pan.
  7. Prick the surface of the dough with a fork.
  8. Bake 30 35 minutes, or until edges are lightly golden brown.
  9. Let cool completely in the pan before lifting out.
