  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 6 medium Yukon Gold potatoes, peeled and thinly sliced
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 0.25 cup all purpose flour
  • 3 cups beef broth
  • 1 cup milk
  • 1 teaspoon Worcestershire sauce
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1.5 cups shredded cheddar cheese, divided

Instructions

  1. Preheat grill to medium high heat. Rub steak with 2 tablespoons olive oil, 1 teaspoon salt, 0.5 teaspoon black pepper, and 1 teaspoon garlic powder.
  2. Grill steak for 4-6 minutes per side for medium rare. Let rest 10 minutes, then slice into bite sized pieces.
  3. Preheat oven to 375°F (190°C). In a large skillet, heat a tablespoon of olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  4. Sprinkle the flour over the onion and garlic mixture. Cook for 1 minute, stirring constantly. Gradually whisk in the beef broth and milk until smooth. Add Worcestershire sauce, salt, and pepper. Bring to a simmer, stirring constantly, until the sauce has thickened slightly, about 5 minutes.
  5. In a large bowl, combine the sliced potatoes, sauce, and 1 cup of shredded cheddar cheese. Mix well to ensure the potatoes are evenly coated.
  6. Pour half of the potato mixture into a greased 9×13 inch baking dish. Spread the sliced grilled beef evenly over the potato layer. Top with the remaining potato mixture.
  7. Cover the baking dish with foil and bake for 45 minutes. Remove the foil, sprinkle with the remaining 0.5 cup of cheddar cheese, and bake for another 15-20 minutes, or until the potatoes are tender and the cheese is melted and bubbly.
  8. Let the casserole cool for a few minutes before serving.
