A smoky and comforting grilled beef casserole made with tender beef cubes, mixed vegetables, and a creamy mushroom sauce topped with cheddar cheese and French fried onions.

- 2 pounds beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 1/2 cup beef broth
- 1 (10 ounce) package frozen mixed vegetables, thawed
- 1 cup shredded cheddar cheese
- 1/2 cup French fried onions, crushed
Instructions
- Preheat your grill to medium high heat. Toss the beef cubes with olive oil, salt, pepper, thyme, and smoked paprika. Grill for about 10 to 15 minutes, turning occasionally, until browned on all sides.
- In a large bowl, combine the grilled beef, cream of mushroom soup, beef broth, and thawed mixed vegetables. Stir well.
- Pour the beef mixture into a greased 9×13 inch baking dish.
- Sprinkle the shredded cheddar cheese evenly over the top.
- Bake in a preheated oven at 350 degrees F (175 degrees C) for 20 to 25 minutes, or until the cheese is melted and bubbly. Broil for the last 1 to 2 minutes for a golden brown top.
- Remove from the oven and sprinkle the crushed French fried onions over the top.
- Let cool for a few minutes before serving.
