  • 6 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup crumbled blue cheese (optional)
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat. Rub the steak with olive oil, salt, and pepper.
  2. Grill the steak for 4-5 minutes per side for medium-rare, or longer depending on your desired doneness.
  3. Remove the steak from the grill and let it rest for 10 minutes before slicing againt the grain.
  4. While the steak is resting, combine the mixed greens, cherry tomatoes, cucumber, and red onion in a large bowl.
  5. In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, minced garlic, honey, salt, and pepper.
  6. Slice the steak thinly and add it to the salad. Pour the dressing over the salad and toss gently to combine. Top with crumbled blue cheese, if desired.
