  • 2 boneless, skinless chicken breasts (about 6 ounces each)
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder
  • ½ teaspoon ground ginger
  • ¼ teaspoon red pepper flakes, optional
  • 2 cups cooked rice (white, brown, or jasmine)
  • 1 tablespoon sesame oil
  • 1 avocado, sliced
  • 1 cup broccoli florets, steamed or grilled
  • ½ cup shredded carrots
  • ¼ cup chopped green onions
  • 2 tablespoons sesame seeds
  • Spicy mayo or sriracha for drizzling (optional)

Instructions

  1. In a medium bowl, whisk together the olive oil, soy sauce, honey, rice vinegar, garlic powder, ginger, and red pepper flakes (if using). Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  2. While the chicken is marinating, cook the rice according to package directions. Once cooked, fluff with a fork and stir in the sesame oil.
  3. Preheat your grill to medium heat. Remove the chicken from the marinade and discard the marinade. Grill the chicken breasts for 6 8 minutes per side, or until cooked through and the internal temperature reaches 165°F (74°C).
  4. Let the grilled chicken rest for 5 minutes before slicing into thin strips.
  5. Divide the cooked rice between two bowls. Top with the sliced grilled chicken, avocado, broccoli, carrots, and green onions.
  6. Sprinkle with sesame seeds and drizzle with spicy mayo or sriracha, if desired. Serve immediately.
