A healthy and delicious grilled chicken salad with mixed greens, cherry tomatoes, cucumber, feta cheese, olives, and a tangy vinaigrette.

- 2 boneless, skinless chicken breasts (about 6 oz each)
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 6 cups mixed greens (spring mix, romaine, spinach)
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, sliced
- 1/4 cup red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup Kalamata olives, pitted and halved
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a small bowl, whisk together olive oil, paprika, garlic powder, salt, and pepper. Rub the mixture all over the chicken breasts.
- Preheat your grill to medium heat. Place the chicken breasts on the grill and cook for 6 8 minutes per side, or until the internal temperature reaches 165°F (74°C). Let the chicken rest for 5 minutes before slicing or shredding.
- In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper, until well combined.
- In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, and Kalamata olives.
- Top the salad with the sliced or shredded grilled chicken.
- Drizzle the vinaigrette over the salad and toss gently to combine.
- Serve immediately.
