  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup all purpose flour
  • 2 cups milk
  • 1/2 cup chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 cup frozen peas
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your grill to medium heat. Brush the cod fillets with olive oil and season with salt, pepper, and garlic powder.
  2. Grill the cod for 3-4 minutes per side, or until it is cooked through and flakes easily with a fork. Be careful not to overcook it.
  3. Let the cod cool slightly, then flake it into large chunks.
  4. Preheat your oven to 375°F (190°C).
  5. Melt the butter in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook for another minute until fragrant.
  6. Stir in the flour and cook for 1 minute, creating a roux.
  7. Gradually whisk in the milk and chicken broth until smooth. Bring to a simmer, stirring constantly, until the sauce has thickened slightly, about 3-5 minutes.
  8. Remove from heat and stir in the salt, pepper, nutmeg, peas, and Parmesan cheese.
  9. Gently fold in the flaked grilled cod.
  10. Pour the mixture into a greased 9×13 inch casserole dish.
  11. Top with the shredded cheddar cheese.
  12. Bake for 20-25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
