- 1. 5 pounds cod fillets, skinless
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1 tablespoon butter
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1/4 cup all purpose flour
- 2 cups milk
- 1/2 cup chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1 cup frozen peas
- 1/2 cup grated Parmesan cheese
- 1 cup shredded cheddar cheese
Instructions
- Preheat your grill to medium heat. Brush the cod fillets with olive oil and season with salt, pepper, and garlic powder.
- Grill the cod for 3-4 minutes per side, or until it is cooked through and flakes easily with a fork. Be careful not to overcook it.
- Let the cod cool slightly, then flake it into large chunks.
- Preheat your oven to 375°F (190°C).
- Melt the butter in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook for another minute until fragrant.
- Stir in the flour and cook for 1 minute, creating a roux.
- Gradually whisk in the milk and chicken broth until smooth. Bring to a simmer, stirring constantly, until the sauce has thickened slightly, about 3-5 minutes.
- Remove from heat and stir in the salt, pepper, nutmeg, peas, and Parmesan cheese.
- Gently fold in the flaked grilled cod.
- Pour the mixture into a greased 9×13 inch casserole dish.
- Top with the shredded cheddar cheese.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
