A flavorful and easy to make grilled salmon pasta with creamy parmesan sauce, perfect for a weeknight dinner.

- 2 (6 ounce) salmon fillets, skin on or off
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- ½ teaspoon garlic powder
- Salt and pepper to taste
- 1 pound pasta (penne, fusilli, or farfalle work well)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- ½ cup dry white wine (optional)
- 1 cup heavy cream
- ½ cup grated Parmesan cheese, plus more for serving
- ¼ cup chopped fresh parsley
- 2 tablespoons lemon juice
- Salt and pepper to taste
- Lemon wedges, for serving
Instructions
- Preheat your grill to medium high heat. Brush the salmon fillets with olive oil and season with smoked paprika, garlic powder, salt, and pepper.
- Place the salmon on the grill, skin side down if the skin is on. Grill for 46 minutes per side, or until cooked through and flakes easily with a fork. Let cool slightly, then flake the salmon into bite sized pieces.
- While the salmon is grilling, cook the pasta according to package directions. Reserve about 1 cup of pasta water before draining.
- While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the garlic and cook until fragrant, about 30 seconds. Pour in the white wine (if using) and let it simmer for a minute or two, allowing the alcohol to evaporate.
- Stir in the heavy cream and Parmesan cheese. Season with salt and pepper to taste. Bring to a simmer, then reduce heat and let the sauce thicken slightly, about 5 minutes.
- Add the cooked pasta and flaked salmon to the sauce. Toss to coat. If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency. Stir in the chopped parsley and lemon juice. Serve immediately, garnished with extra Parmesan cheese and lemon wedges.
