Ingredients

  • 2 (6 ounce) salmon fillets, skin on or off
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • 1 pound pasta (penne, fusilli, or farfalle work well)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • ½ cup dry white wine (optional)
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese, plus more for serving
  • ¼ cup chopped fresh parsley
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Lemon wedges, for serving

Instructions

  1. Preheat your grill to medium high heat. Brush the salmon fillets with olive oil and season with smoked paprika, garlic powder, salt, and pepper.
  2. Place the salmon on the grill, skin side down if the skin is on. Grill for 46 minutes per side, or until cooked through and flakes easily with a fork. Let cool slightly, then flake the salmon into bite sized pieces.
  3. While the salmon is grilling, cook the pasta according to package directions. Reserve about 1 cup of pasta water before draining.
  4. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the garlic and cook until fragrant, about 30 seconds. Pour in the white wine (if using) and let it simmer for a minute or two, allowing the alcohol to evaporate.
  5. Stir in the heavy cream and Parmesan cheese. Season with salt and pepper to taste. Bring to a simmer, then reduce heat and let the sauce thicken slightly, about 5 minutes.
  6. Add the cooked pasta and flaked salmon to the sauce. Toss to coat. If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency. Stir in the chopped parsley and lemon juice. Serve immediately, garnished with extra Parmesan cheese and lemon wedges.
